You can have up to 3 main professions
Alchemy, Blacksmithing, Enchanting, Engineering, Herbalism, Inscription, Mining, Leatherworking, Skinning, or Tailoring
And 3 side professions: Cooking, First Aid, and Fishing.
All crafting professions go up to 225, whilst gathering professions go up to 300.
